Context, Department Challenges:

The Plant-Based Fermentation Technician position is part of the R&I Advanced Technology division, whose main missions are to:

  • Create innovative and differentiating technological solutions that meet the needs of consumers and patients, following the strategic framework of One Planet One Health.
  • Support Zone/CBU teams responsible for short-term projects in finding solutions to their challenges whenever high-level expertise is required.
  • Develop and establish leading capabilities, standards, and systems by leveraging digital tools.

Within the Advanced Technology Process department, the Ferments & Fermentation division is tasked with:

  • Delivering innovative biological solutions (cultures & enzymes) during medium to long-term projects to provide superior and specific product experiences across various categories (dairy, plant-based, specialized nutrition, waters).
  • Deliver bioprocesses and associated biotechnologies to meet market innovation demands within an OPOH context.
  • Provide support and expertise to breakthrough innovation projects within the area of competence.

Main missions and responsibilities:

  • Leads or contributes to delivering work packages within the projects carried out by the team.
  • Defines plans and/or recipes (formulas, analytical plans, plannings) in collaboration with the project manager/work package leader. Is proactive in proposing ideas.
  • Submits requests for trials/analyses (using dedicated tools such as Artemis/LIMS).
  • Conducts ferments/product trials, particularly within the scope of plant-based media (transfer and monitoring with the pilot and/or Barcelona; or independently; or in collaboration with the engineer or other technicians on the projects; or externally).
  • Compile trial results.
  • Meets deadlines and ensures quality execution of trials.
  • Contributes to the analysis of results and to the physico-chemical and sensory characterization of the products.
  • Contributes to the capitalization of data concerning Ferments and/or Fermentation and/or propagation trials.
  • Participates in drafting specifications for ferments and processes.
  • Participates in drafting the CIR (Research Tax Credit documentation).
  • Participates in technological monitoring and the capitalization of knowledge in the area of expertise: Ferments, fermentations, and propagations.
  • Participates in optimizing laboratory processes and interactions between pilot units.
  • Works in collaboration with the external ecosystem/partnerships during development, industrial testing, or training activities.
  • Participates in technological and analytical monitoring in the areas of Ferments, Fermentations, Downstream processes, and formulation, particularly concerning plant-based media.
  • Participates in the maintenance and optimization of equipment, laboratory processes (monitoring and implementation of best practices, protocols), and interactions between laboratories and pilot units.

About you

Skills

  • Education: Bac +2 (equivalent to associate degree) with over 7 years’ experience in biology, bioprocesses, or agri-food.
  • Good knowledge of Fermentation, Bioprocesses, and Microbiology.
  • Experience in manufacturing processes on plant-based media
  • Knowledge in physico-chemical analyses (HPLC, enzymatic, etc.) and microbiological analyses
  • Good knowledge of agri-food processing
  • Good knowledge of Quality and Food Safety (HACCP, FSSC22000, etc.)
  • Knowledge in sensory analysis
  • Knowledge of English
