You want to contribute to the company's innovations and become an expert in dairy and plant-based technologies. We are recruiting a pilot technician.
Within the Dairy and Plant-Based Essential Products Research & Innovation, the Paris Saclay Pilot is responsible for carrying out prototyping tests for innovation and renovation projects, and producing products for sensory panels, consumer tests, and clinical studies.
To achieve this, the pilot uses the most advanced technologies and complies with the highest standards in terms of good manufacturing practices and hygiene, quality and food safety.
In this context, the role of the pilot technician is to manage or participate in prototyping and external production tests and to contribute to the transversal tasks essential to the proper functioning of the pilot.
Work is organized into shifts (morning, afternoon) alternating each week.
3. Missions:
- Provides technical thinking on unit operations, adapts processes to the requests of the R&D project teams in collaboration with the engineering technician and the pilot's team leaders.
- Guarantees the proper completion and traceability of cleaning, sanitation, sterilization operations of equipment.
- Guarantees the proper completion of unit operations of powdering, heat treatment, fermentation, cooling, smoothing, packaging or other manufacturing processes (foams, filtration, separation, etc.)
- Writes test reports and completes the test sheet.
- Ensures traceability of ingredients and packaging used.
- Can train and sensitize external staff to the pilot team on the procedures and instructions in force.
- Creates product mock-ups by assembling different components.
- Require participating in the monitoring of the aging of models.
- Require to carry out packing and/or shipping operations.
- Guarantees the cleaning and disinfection of the instruments necessary for in-process analyses (microwaves, pH meters, probes),
- Guarantees the proper functioning and calibration of the instruments necessary for in-process analyses (first-level maintenance, curative maintenance, etc.),
- Manages the preventive maintenance of equipment and small equipment (mobile hoods, viscometer, microwaves, scales, pH meters, pH sensors, etc.).
- Participates in internal quality audits.
- Participates in the implementation and monitoring of actions related to the Hygiene & Food Safety & Engineering of the pilot.
c) Is responsible for the performance of the transversal tasks inherent in the proper functioning of the pilot

- Knowledge of dairy products or other food products
- Fermented and dessert technologies
- Product formulation, dairy/plant-based ingredients and texturizers
- Test management and knowledge of equipment operating principles
- Knowledge in product tracking methods
- Use of computer tools
- Level: Bac +2 /3
